We concluded the events of the year 2020 with a great Italian tradition: panettone!

What would Christmas be without panettone? The typical Milanese dessert (el panetún), emblem of the Christmas holidays, cannot be missing on our decorated tables.

Legend suggests that it was invented by Toni, a boy in the servants of Ludovico il Moro in the early 1500s. The boy was able to save the Christmas dinner cake that had been forgotten in the oven by the cook in charge of organizing a sumptuous banquet. Christmas. Toni had prepared, with some leftovers found in the pantry, a dessert with flour, butter, eggs and some candied fruit. Its creation was so successful that, when the guests asked what this dessert was called, they answered "L'è 'l pan del Toni".

Panettone Homemade

Since the preparation of the panettone requires several steps (leavening) of several hours, Simona used a video she filmed with which she guided us through the various stages of preparation of the excellent Christmas cake.

Ingredients and tools to buy:

  • Bread Flour king Arthur
  • salt
  • sugar
  • water
  • 3 yolks
  • Kerrygold Irish butter (one unsalted Stick)
  • Yeast 2 ¼ tsp SAF gold or 1Tbsp instant yeast
  • Vanilla 1 vanilla bean or 2 tsp bourbon vanilla or Sicilian flower essence
  • Honey
  • orange paste: organic mandarins (or oranges or lemons) 250 gr, sugar
  • Candied fruit: Zest of 3 large oranges or 4 lemons, water and sugar

Candied fruit, raisins, chocolate, cranberries, apricots, pistachios to taste but not more than 250 gr.
